Meatloaf with bacon and ricotta

1. Preheat the oven to 190 degrees with the stand in the middle position. Grate the onion. Finely chop the bacon. In a large bowl, mix the milk and bread cubes. Set aside for 10 minutes, stirring occasionally. 2. When the bread is impregnated with milk, use a fork to mash it to a consistency of mashed potatoes. Add the mince of turkey, eggs, ricotta, grated Mozzarella cheese, grated onion, grated Parmesan cheese, chopped parsley, nutmeg, salt and pepper into a bowl with bread. Hand mix all the ingredients until a homogeneous consistency is obtained. 3. To form from the received weight a roll about 30 sm in length, to lay out a roll on a baking sheet. Layer the roll with slices of bacon from all sides. Cover the roll with aluminum foil. 4. Bake the roll in the oven for 30 minutes. Remove the foil and bake for another 45 minutes until the meat thermometer inserted into the center of the roll registers 77 degrees. Take the roll from the oven, put it on a cutting board and let stand 10 minutes before slicing into slices.
