A few tips to the first pancake was not a "lump" For some reason, not all people like dishes made from the liver, especially children. But such pancakes with liver filling should be liked even by them. It is not only a tasty, but practical dish that can be prepared for future use and frozen, and then simply heated in a microwave oven or fry in a pan. For the filling is suitable not only the liver, but also chicken giblets: hearts, ventricles. But the most important thing is what you will wrap up this stuffing, that is, pancakes yourself. Someone adds vegetable oil directly to the dough and then does not lubricate the frying pan. Others always use a slice of lard to prevent pancakes from burning. But there is another ancient way. First, it is best not to take a modern pan with a non-stick coating, but a cast iron pan with a thick bottom. Secondly, it should be put on a fairly strong fire, pour a layer of salt and hold for at least five minutes. Then pour out the salt, wipe the frying pan with a clean dry cloth - and you can start baking pancakes. After such preparation, no pancake will stick to the bottom.
Ingredients:- Wheat Flour 200 g
- Milk 500 ml
- Eggs chicken 3 pcs.
- Sugar 1 tsp.
- Salt 1 tsp.
- Sunflower refined sunflower oil 2 tbsp. l.
- Chicken liver 300 g
- Onion 2 pcs.
- Carrot 1 pc.
- Sunflower refined sunflower oil 3 tbsp. l.
- Butter 30 g
- Salt 1 pinch
- Pepper black ground 0.5 tsp.
- Step 1 For the filling we take 2 medium bulbs and 1 large carrot. Vegetables cut straws.
- Step 2 The liver is given to be washed and cut into small pieces.
- Step 3 Well warm up the frying pan, add 2-3 tablespoons of vegetable oil and fry onions with carrots.
- Step 4 We take out the ready-made vegetables from the frying pan and fry the liver in the same oil, adding salt and pepper to taste.
- Step 5 We pass the hot liver and roasted vegetables through a meat grinder, while adding butter.
- Step 6 Cool the filling.
- Step 7 For the dough mix eggs, flour, sugar and salt.
- Step 8 We knead the dough well.
- Step 9 When the dough becomes homogeneous, add room milk to 2-3 tablespoons, gently kneading so that there are no lumps.
- Step 10 The dough is quite liquid.
- Step 11 Bake pancakes in a well-heated frying pan, each time lubricating it with a culinary brush with vegetable oil (approximately 10-13 pancakes are obtained).
