1. Preheat the oven to 120 degrees, oil a large baking sheet. In a medium-sized bowl, beat egg white into a foam. 2. Add the pecans and stir until all the nuts are evenly coated with the protein mass. 3. In a small bowl, beat up sugar, cocoa powder, ground cinnamon, ground ginger, cayenne pepper and ground allspice. Add the sugar mixture to the nuts and stir until the nuts are evenly coated with the mixture. 4. Put the pecans on the baking sheet in one layer. 5. Bake in the oven at 120 degrees for one hour, stirring every 15-20 minutes until the nuts are dry and the sugar remains on your fingers when touched.
