- pasta penne or other short pasta - 450 Grams
- olive oil - 1/4 cup
- cloves garlic, thinly sliced - 2 pieces
- Cherry tomatoes - 2 Cups
- dried oregano - 1 teaspoon
- chopped red pepper - 1/4 Teaspoon
- pitted black olives - 1/4 cup
- parsley - 1/4 Glass
- Parmesan cheese - 1/4 Cups
In a large saucepan with boiling salted water boil the paste according to the instructions on the package, about 13 minutes. Drain the water. Meanwhile, in a large frying pan, heat the olive oil over medium heat. Add garlic and fry, stirring until it turns golden, about 1 minute. Add the cherry tomatoes, oregano, chopped red pepper, 1/2 teaspoon salt and 1/4 teaspoon pepper. Reduce the heat to a minimum and cook for about 3 minutes. Add the pasta, olives, parsley and 1/4 cup Parmesan in a frying pan and stir. Serve with cheese if necessary.
