History of the origin of pea soup Pea soup has a very long history. Strictly speaking, the same as this bean plant, which is cultivated since ancient times. In the middle of the first century BC on the streets of Athens, they sold hot pea soup. This fragrant dish even then enjoyed incredible popularity. Usually this dish is prepared from dried peas. It is very difficult to say exactly which country the recipe for pea soup belongs to. In different variations - it is prepared in different countries. For example, in the Italian recipe it is necessary to add Parmesan cheese and dry wine, in Mongolia sour cream and tomato juice, but in Western Ukraine at the end of cooking in a pot, squeeze several cloves of garlic. To pea soup turned out to be particularly tasty, you need to choose the right peas, it should be Dutch brain varieties. Before cooking, peas are soaked in very cold water for several hours, during which the water is changed several times. To give pea soup incredible taste and aroma, it is necessary to add roasted loin, and before serving - bread crumbs of own cooking from wheat bread.
Ingredients:- Peas dry whole 250 g
- Pork steak smoked 150 g
- Onions 1 pc.
- Garlic 1 clove
- Carrot 1 pc.
- Potatoes 4 pcs.
- Bay leaf 1 pc.
- Pepper fragrant 5 pcs.
- Pepper black ground 1 pinch
- Salt 2 pinch
- Fresh dill 1 bunch
- Step 1 To make pea soup you need to take: peas, smoked pork loin, onions, carrots, garlic, potatoes, spices and greens.
- Step 2: Peel and clean peas, onion and garlic clean.
- Step 3 Put the peas, onion, garlic, pepper fragrant and pour cold water into a 4-liter pan. Cook about two hours, removing the foam, before turning peas into porridge on a very slow fire, so that the broth turned out delicious and rich.
- Step 4 We clean the potatoes and cut them into cubes, clean the carrots and cut them with strips. We send it to the broth, when the peas are boiled, before that we remove the bulb - it will no longer be needed. Also add bay leaf, salt and ground pepper to taste. Cook for 15-20 minutes. The bay leaf must be removed after the preparation of pea soup.
- Step 5 Cut the loaf into strips.
- Step 6 Fry the meat on the sunflower oil until golden brown. And we send it to broth, after the potatoes are ready. Bring to a boil and remove from heat.
- Step 7 To serve the pea soup, prepare the bread crumbs from white bread.
