1. Place the pizza stone on the bottom shelf of the oven and heat the oven to 260 degrees. Divide the dough in half and form from each ball. Put the balls of dough aside. Grate Mozzarella and Parmesan large grater. Cut the ham into slices. 2. Finely chop the onion. Remove the fennel core and cut. Preheat the olive oil in a medium frying pan over medium heat. Add the onion, fennel and a teaspoon of salt. Fry, stirring, until the onion begins to acquire a brown color, about 5 minutes. Reduce the heat and fry, stirring occasionally until the onion is golden, about 15 minutes. 3. Put one half of the dough on a lightly floured work surface. Roll the dough into a circle and stretch it to the sides. Pull the pizza stone with parchment paper and put dough on it. Put on top half of the caramelized onion, fennel, mozzarella and ham. Bake pizza 8-10 minutes, until the crust darkens around the edges. Put the pizza on the grate, sprinkle with grated Parmesan large grater and parsley. Let the pizza stand for 5 minutes before serving. Repeat the procedure with the remaining ingredients to prepare the second pizza.
