Orange jam.
When you harvest carrots in autumn, then one way or another, you will have those fruits that will be damaged. Such carrots are kept poorly. But it produces an excellent treat - jam, which can be stored for a long time. Cut off the bad or damaged places of carrots, cut the carrots into small cubes or circles, rinse. For 5 minutes, the resulting lobules should be lowered into boiling water. At this time, you can prepare a syrup: 2 cups of water mixed with 4 glasses of sugar (given proportions of 1 kg of carrots). With this syrup pour the carrots, bring to a boil and cook for 5 minutes. Then we prepare the syrup from the following ingredients: 3 cups sugar and 1 glass of water. We pour this syrup into hot jam. Stir well and put in a cool place for 12 hours. After that, cook the jam for about 20 minutes. At the end of cooking, add vanillin or citric acid to taste. Remove the jam from the fire and set it for a few hours in a cool place to cool. After the jam completely cool it is possible to pour it over the jars. Here is an original delicacy.
Green jam.
The next recipe is no less original. To make a green delicious jam, you need to take 1kg of small green tomatoes (in the autumn there are many on branches), 1kg of sugar, 0.5l of water. We puncture tomatoes with a fork in several places and fill them with water. We put it on the fire and bring it to a boil. Boiling water is drained and poured tomatoes with fresh cold water. This water will also need to be drained when it boils. Such procedures are needed to make bitter tomato. The third time we pour tomatoes no longer with water, but with sugar syrup, and hot. Bring the mixture to a boil. In the process of cooking, excess foam should be removed from the jam. Tomatoes are cooked until ready, jam set in a cool place to cool, and then poured into jars.
Striped jam.
For this exquisite treat, you will need 1kg of watermelon crusts, 1.5kg of sugar, 05l of water, 0.5hr.l. citric acid.
The recipe for making striped jam is simple: watermelons are cleaned from a loose white layer and the top peel. The resulting crusts are cut into slices or cubes, pour boiling water for 10 minutes. After that, drain the water and put the crusts into sugar syrup (0.5 kg of sugar per glass of water). Cook on low heat until the crust is clear. After that, remove the container from the fire and cover with a cloth or gauze. The bowl is left in a cool room for the night. For the morning in the jam should be added the remaining sugar syrup, citric acid. Jam should be "cooked" in 3 divided doses: 10 minutes every three hours. After that, the jam is cooled, and then poured over cans.
Yellow jam.
It often happens that you buy a melon, but it is not sweet. It is a pity to throw it out, but there is absolutely no desire. From such a melon you get a wonderful jam, which you can eat in winter and remember the taste and smell of summer.
For 1 kg of purified melon you need to take 1 kg of sugar, 3 hundred of water. Melon should be peeled from the peel and seeds and cut into cubes. Cubes fall asleep with sugar (1st), let stand a couple of hours in a cold place. Mix the remaining sugar with water and cook the sugar syrup. Cooled sugar syrup should be watered melon. Melon in sugar syrup should also be taken to a cold place (refrigerator). The next day, the syrup should be drained and brought to a boil. With boiling syrup pour the pieces of melon and put it in the cold. The next day you should repeat all the same, only this time the jam is cooked already to the full readiness - the pieces of melon should become completely transparent and soft. After that, cool the jam and pour over the jars.
Pink jelly.
This strange delicacy is prepared, one might say, from waste, but nevertheless it will turn out very tasty. We need apple peel and core. Fill up to half the contents and cook peels and cores on low heat for about 2 hours. Then filter, grind through a sieve and leave the mixture for the night. In the morning, add sugar in equal proportions and cook the mixture until the juice becomes thick and pink. This jelly is poured into sterilized jars and rolled up with lids.
Amber jam.
This jam seems to someone to taste orange, and someone - pineapple. And rarely anyone guesses that in fact it is cooked from a vegetable marrow!
So, how to cook such an exquisite delicacy, which can be stored for a long time?
We take 1 kg of zucchini and 1 kg of sugar, a raw orange, which will give a unique flavor to the cook. Cut the small cubes of orange and zucchini, fall asleep with sugar and leave for the night. The next morning the juice will be extracted from the cubes. Dice in juice put on the fire and, without adding water, cook for 15 minutes after the mixture began to boil. After the jam has cooled, it should be cooked in two more meals for 15 minutes.
After that, the jam should be cooled and poured into jars.
