Beef cutlets, recipe

Products: 800 g of beef pulp, 200 grams of kidney fat, 3 slices of white bread, 1/3 cup of milk, 100 g of butter, 2 eggs, 1 cup of breadcrumbs, salt, black pepper to taste.

Preparation: Prepared meat and lard skip through a meat grinder. In butter, fry the chopped onion, add it to the mince, add salt, pepper and pass it through the meat grinder. Add in ground meat soaked in milk and, pouring milk, beat the forcemeat to a magnificent consistency.

Put the mincemeat on a water-soaked board and, dividing it into small portions, use a knife to form cakes from them with small depressions in the middle. In each cavity pour a teaspoon of broth (water) or melted butter. The edges of the flat cake wrapped in a crochet and give the product the shape of a cutlet. Roll the cutlets in egg and breadcrumbs, and then fry in oil. In this case, first fry wrapped side down. Willingness to determine by pressing it with a knife. If the juice that was released as a result of this is light, then the chops are cooked.

As a side dish to cutlets serve stewed cabbage, fried potatoes or mashed potatoes, vegetables.

If in the mince instead of bread add raw vegetables - for example, carrots, onions, then cutlets
