Lamb stuffed with couscous

What do you need:

lamb leg up to 2.5 kg
100 grams of lamb liver
100 g of salted lard
100 grams of hard cheese
3 onions
2 tbsp. l. cilantro and mint
3 tbsp. l. butter
1 cup ready couscous
2 tbsp. l. dried oregano

What to do:


Chop onion and fry in 1 tbsp. l. oil 10-12 minutes. Wash the liver, cut, fry 3 minutes. in 1 tbsp. l. oil. Combine the liver and onions, add the cooked couscous, lard, greens, salt and pepper, pour 0.5 cups of water. Stir and cook over low heat for 2-3 minutes.

Cheese cut into cubes, add to the filling, remove from heat and mix. Slice the meat, make a pocket. Fill it with a stuffing and wrap the leg with a thread. Grate with the remaining oil, salt, pepper and oregano. Fold in foil and bake in the oven at 180 ° C for 1 hour. Then remove the foil and bake for another 1 hour.
