The cake "Lady's fingers" consists of eclairs filled with sour cream. The cake is very tender and looks like ice cream. Preparation: Heat the butter and water in a saucepan. Bring to a boil, stirring constantly until the oil melts. When the water boils, turn off the fire, add flour, salt and quickly knead the dough. Add eggs one at a time and mix until smooth. You should get a soft thick dough. Preheat the oven to 200 degrees. Line the baking tray with parchment paper. Using a pastry syringe or a bag, squeeze out the eclairs on the baking sheet from 5 to 10 cm long. Bake for 20 minutes, then reduce the temperature to 150 degrees and bake for 5-7 minutes. Turn off the oven, open the door and let cool. To make a cream, beat the sour cream with sugar. Dip each eclair in the cream and put it in a split form. Pour the remaining cream. Put the form in the refrigerator for 4-5 hours (preferably at night). During this time, eclairs should be well saturated with cream. One hour before serving, prepare the chocolate icing. Place the chocolate in a bowl placed over a pot of boiling water. Stir until the chocolate dissolves completely. Take the cake out of the mold and pour the melted chocolate.
