Cake recipe from Finnish grandmother

When the autumn comes so far, often even the most cheerful people find a mope associated with the onset of unseasonable days. To disperse it, it's best to brew your own hot tea and bake something homemade to him, something that your grandmother probably did, something that will give you warm memories!

I want to present you a pie recipe from Finnish grandmother Mustikkapiirakka! Even if you did not have Finns in the family, be sure - this cake will envelop you with the warmth of local traditions and give the flavor of northern cuisine.

Its preparation does not take much time, but its taste will bring you incomparable pleasure, driving away the whole autumn melancholy.

Step-by-step recipe for Finnish pie

So, what you need to have at your fingertips:

First we set the oven to bask. The temperature we need is 200 degrees. It is best to get all the ingredients, except sour cream, for an hour - one and a half to finish.

When everything is ready - we proceed to the test. To do this, whip until softly softened butter with one egg and sugar.

Then we sift the flour and add it together with the baking powder into the mixture. We mix it well and put it in a previously oiled form (I took 26 cm). We distribute the dough on the bottom.


When everything is ready, we pour the dough with beans (we can take peas) on top of the dough, so that our base does not rise. And then we send it to the preheated oven for 15 minutes.

It is important to pre-lay parchment or tracing paper on the dough, otherwise your pie will also be with beans!

The classic pie does not involve anything other than a cream top filling. But I also add a little crumb from the top. To do this, grate 50 g of oil on a grater (it is better to take a cold grater) and mix with 100 g of flour and a small amount of sugar. This mixture is rubbed into a crumb and put into the refrigerator for 30 minutes.

When the dough is in the oven, and the crumb in the fridge - we proceed to the filling!

To do this, beat the sour cream with a second egg, sugar powder and vanilla extract.

When 15 minutes have passed - we remove the base for the pie from the oven. And we reduce the temperature to 180 degrees. Pre-washed berries are evenly distributed throughout the surface of the dough and filled with creamy-egg mixture.

If you want to add a crumb - now it's time to spread it evenly from the top.


We send the cake back to the oven for about 30 minutes. Before serving, the pie can be sprinkled with powdered sugar!
