Prepare a bowl of icy water, set aside. In a large saucepan bring the water to a boil, season with salt. Add spinach and cook for about 30 seconds. Throw the spinach in a colander and put in a prepared bowl of ice water. Let the spinach cool completely, about 30 seconds. With your hands squeeze the spinach to remove excess liquid, and lay the spinach on the work surface. Coarsely chop the spinach and put into a bowl, set aside. In a small bowl, whip together sesame oil, soy sauce, rice vinegar and mirin wine. Add the sauce and sesame seeds to the spinach. Spinach can be stored for 2 days.
