Recipe for New Year's cake "Midnight"
This is a rather complex recipe, but it's worth it.
Necessary ingredients
For the test:
- eggs - 12 pieces
- sugar - 400 g
- flour - 400 g
- walnut (core) - 100 g
- cocoa - 3 tsp.
For syrup:
- sugar - 100 g
- rum or cognac - 50 g
- water - 200 g
For cream:
- Butter - 400 g
- egg chicken - 1-2 pieces
- milk - 200 ml. l
- sugar - 200-250 g
- flour - 2 tbsp. l.
- rum or cognac - 50 g
- cocoa - 2 tbsp. l.
Cooking method:
- to prepare the cake "Midnight" you need to prepare a light and dark biscuit dough. Light dough: in a deep bowl, whisk thoroughly 6 eggs with sugar, adding a little 200 g of flour, do not forget to mix everything thoroughly. The resulting dough is placed in a baking dish and sent to a preheated oven to a temperature of 180 degrees. Bake light biscuit until golden brown. Remove and allow it to cool for about 1-2 hours;
- for a dark biscuit in a deep bowl, whisk thoroughly 6 eggs with sugar, then gradually add 200 g of flour and 3 tsp. cocoa and mix. Then lightly fry the kernels of the walnut and chop them with a knife. In the prepared dough add the nuts and once again gently whisk everything. Bake, as well as a light crust;
- start cooking the cream - it will also be two colors. In a deep bowl with a mixer, whisk 400 g of butter and sugar very well until an airy, homogeneous mass forms. Divide the cream into two equal parts. In one part, add 2 tbsp. l. cocoa, and in the other 50 grams of rum or cognac. Pour both parts of the cream well again.
Advice: you can instead of a cream, prepare the custard. To do this, boil 200 grams of milk on a small fire, and in a separate bowl, beat 1-2 eggs with sugar, which then add to boiling milk, while constantly stirring. Bring this mixture to a boil and set aside for cooling. Whisk 400 g of butter and gradually add the resulting mixture, while you must constantly whip the cream. It should be homogeneous and light. Also divide the cream into two parts, in one add 2 tbsp. l. cocoa, and in the other 50 grams of rum or cognac
- With a sharp long knife, cut the cooled biscuits into two pieces. Saturate parts of the cake with a syrup of sugar, cognac and water. On a large flat plate, put a dark cake, grease with white cream, then a light crust, and, accordingly, a dark cream. So, all parts of the cake. Uneven edges of biscuits flatten with a sharp knife;
- The resulting cake grease from all sides and decorate it, having painted on the surface of the dial. To do this, melt the black chocolate bar on a water bath and draw the numbers and arrows using a pastry syringe.
The recipe for the coffee cake with walnuts
Necessary ingredients:
- flour - 200 g
- Butter 250 g
- egg chicken - 3 pieces
- sugar - 200 g
- walnut (core) - 100 g
- Powdered sugar - 200 g
- baking powder - 1 tsp.
- mascarpone cheese - 120 g
- coffee soluble - 3 tbsp. l.
- preheat the oven to 180 degrees;
- in a deep bowl, add flour, baking powder, sugar, 3/4 butter and eggs. Beat all this until smooth;
- dissolve in two tablespoons of boiling water 2 tbsp. l. Soluble coffee and add together with crushed walnuts into the resulting dough. Divide the dough into two pieces and bake in an oven in a detachable shape. The time of preparation of one crust is 30-35 minutes. Cool cooled cakes, and cut them along into equal parts;
- while baked cakes, cook the cream. To do this, in a bowl, whip the remainder of the butter with mascarpone cheese. Dissolve 1 tsp. instant coffee in 1 tbsp. l. boiling water and add in a bowl with butter and cheese. Stir thoroughly once more. In the resulting mixture, gradually enter the powdered sugar and whip the mixer - the cream is ready;
- lay on the dish ready cakes, lubricating each cream. Cake the garnish with walnut slices.
