1. Preheat the oven to 175 degrees with a stand in the center. Lubricate the cake pan and vanish with parchment paper. In a large bowl, mix flour, baking powder, soda, salt and spices together. Beat butter, brown sugar and vanilla extract in a separate bowl with an electric mixer at high speed, 2 to 3 minutes. Add eggs one by one, whisking after each addition, and then beat with apple sauce. Reduce the speed to low and add the floury mixture. Then add chopped walnuts (if used). The dough will look a bit uneven. Put the dough evenly into the prepared form. 2. Bake until golden brown, about 35 to 40 minutes. Let it cool down in 15 minutes. Extract the cake from the mold and put on a plate, allow to cool completely. You can speed up the cooling by putting the cake in the fridge. 3. Make the glaze. Beat cream cheese, butter and vanilla extract with an electric mixer at high speed. Add the sifted powdered sugar and cinnamon, whisk at medium speed until smooth. 4. Lubricate the iced cake with the glaze. Keep the cake in the fridge.
