Shaurma in vegetarian style Today we are preparing a falafel - this is a legendary dish, which I mentioned earlier, when I cooked chickpeas. My delight is hard to describe when I first tried home falafel. Crispy warm chickpeas cutlet, in combination with fresh cucumbers, tomatoes, lettuce leaves and all this is abundantly dressed with sesame-garlic sauce in crispy pita or pita bread. Fast food can be a healthy food - this dish is proof of that.
As for the characteristics of the preparation, I recommend filling directly before serving, because the vegetables will give juice and can soak the crusty pita. If there is no pita, you can use thin Armenian lavash (as given in the recipe below). A romaine salad can be replaced with leaves of Peking cabbage. Ingredients:- Chickpeas (chickpeas) 150 g
- Carrot 1 pc.
- Parsley fresh 1 bunch
- Onions 1 pc.
- Ground coriander 5 g
- Sea salt 10 g
- Black pepper powder 4 g
- Flour, wheat 250 g
- Olive oil 200 ml
- Water 50 ml
- Tomatoes 3 pcs.
- Romaine lettuce 30 g
- Onion purple 1 pc.
- Cucumber 2 pcs.
- Pita bread thin 4 pcs.
- Sesame White 200 g
- Olive oil 80 ml
- Garlic 2 cloves
- Parsley fresh 1 bunch
- Lemon juice 3 tsp.
- Salt 10 g
- Black pepper powder 4 g
- Step 1 To prepare the falafel you will need olive oil, chickpeas, flour, lettuce, thin lavash, tomatoes, cucumbers, onions, carrots, salt, pepper and coriander.
- Step 2 To prepare the sauce you need sesame, olive oil, parsley, garlic, lemon juice, salt and pepper.
- Step 3 Preliminary, at least 8 hours soak chickpeas in the water.
- Step 4 It is also advisable to prepare the thahin sauce, which will perfectly emphasize the taste of falafel.
- Step 5 Let's start cooking chickpeas. To do this, soak the chickpeas under the water, pour into a blender, add water and grind until smooth. Then add the carrots, onions and grind.
- Step 6 Add the salt, coriander and flour (a few tablespoons) to the nut-and-vegetable mass, and mix. The dough should not get too thick.
- Step 7 Spread a tablespoon of dough into the flour and roll it in a good way, forming a ball. So do with the whole test. Meanwhile pour a lot of oil into the frying pan and heat until crackling.
- Step 8 Put the cutlets in boiling oil and fry from all sides until golden brown.
- Step 9 The crust must turn crispy, and the filling is well roasted and juicy.
- Step 10 Cut the cucumber rings and tomato slices.
- Step 11 Finely chop the onions.
- Step 12 The salad is well washed and peeled off.
- Step 13 Place the lavash on a plate, top out the cucumber, tomatoes and onions. Distributing vegetables in such a way that the lower part of the pita bread can be wrapped.
- Step 14 Then put the leaves of the salad and 3 chickpeas.
- Step 15 Pour the sauce and wrap the filling in the pita bread. First, wrap the bottom part, and then move to the edges.
- Step 16 Falafel can be wrapped in parchment paper so that the filling does not fall out and so do with the rest of the ingredients. Falafel is ready!
