Fish with peach sauce

WHAT DO YOU NEED:

• 400 g fillets of white fish
• 2 tbsp. l. olive oil
• salt pepper

For sauce:

• 1 onion
• 3 small peaches
• 1 tsp. grated ginger
• 1 tsp. honey
• 3 tbsp. l. dry white wine

WHAT TO DO:

1. Prepare the sauce. Peaches to wash, to pass with boiling water, then to dip into ice water. Peel and cut into slices. Onion peel and grind. Put peaches, onion, ginger and honey in the saucepan. Pour in the wine. Bring to a boil and cook for 10 minutes, without covering with a lid, until a soft, homogeneous mass is obtained.

2. Cut the fish into slices. In a frying pan heat the oil, put the fish, salt, pepper and fry from two sides, for 6-8 minutes, until a crispy brown.

Serve hot with peach sauce. You can sprinkle chopped cilantro.
