Tomatoes with corn

Currant leaves, dill stems and parsley wash, fold in a tray and scald with boiling water. Take out the greens and currant leaves from the water, slightly dry and lay on the bottom of a clean jar (1 umbrella dill and 2-3 leaves of currant to postpone). Remove the leaves from the ears of corn, thoroughly wash them, dry and cut off the faded tips. Prepared leaves of corn put on currant leaves with greens. The corn cobs should be cleaned of pestles ("hairs"), washed, dried and cut into slices. Small, dense tomatoes to wash, dry and pierce in several places with a wooden stick. Prepared tomatoes to lay one layer in a jar on the leaves of corn. In the emptiness formed, put the circles of corn. Thus, fill the entire can with tomatoes and corn. From above put the remaining currant leaves and dill umbrella. To prepare the brine in warm water (about 1.5 liters) put bay leaf, peas of black pepper, pour in salt, bring to a boil and cool. Pour the tomatoes with corn prepared with brine, cover and place in a cool place. Salt tomatoes (and other vegetables) best in large containers, for example in oak barrels or in large enamel pots. In this case, a scalded wooden circle is put on the laid vegetables, and oppression is applied from above. For storage, barrels or pots with salted vegetables are placed in the cellar.

Canned fried mushrooms with carrots

1 kg of fresh mushrooms (for example, chanterelles), 1-2 carrots, 1 garlic head, dill and parsley, vegetable oil for frying, salt to taste, table vinegar to taste.

Mushrooms cleaned, rinsed, poured cold water and leave for at least 2 hours to remove all sand. After that, carefully remove the mushrooms from the water (rather than drain the water!), Rinse again under cold running water and dry. Fry the mushrooms in small portions on a strongly heated vegetable oil. The juice, which forms during the frying process, is poured into a bowl. After roasting, add all the portions of mushrooms together and fry them again. Carrots clean and boil in a small amount of salted water for 15 minutes. Wash the greens and drain them. Cut the boiled carrots into thick slices, peel the green leaves into separate twigs. Garlic clean and cut across the plates. In dry, pre-sterilized canisters put fried mushrooms, alternating them with slices of boiled carrots, plates of garlic and twigs of greens. In the juice with butter, left after roasting mushrooms, sprinkle salt, pour vinegar to taste and bring to a boil. Prepare the dressing to pour mushrooms. If the liquid is not enough, then add the necessary amount of calcined vegetable oil to the jars. Cover the jars with lids and sterilize (0.5 l - 50 minutes from the time the water boils). After that, the cans are tightly sealed, cooled and stored in a cool place. Fried mushrooms can be prepared with onions. To do this, 2 large onion heads need to be cut into cubes, fry in vegetable oil in a separate frying pan and mix with the mushrooms during the last frying.

Jam from apples with oranges

1 kg of apples of hard varieties, 1 orange, 1 kg of sugar.

Apples should be washed, drained, stripped and cut into slices. Wash the orange thoroughly and boil it with boiling water. Cut the orange into circles, cut the circles into 4 parts and remove the stones. Cut the sliced ​​orange into a saucepan, pour 1 cup boiling water, put the pan on the fire and boil 1 min. Then add sugar, mix thoroughly and bring the syrup to a boil. In a saucepan with syrup, put the apples, gently mix, remove from heat and leave for 1 hour. After that, put the saucepan on fire again, stir and bring the jam to a boil. Remove the saucepan from the heat and leave for 5-6 hours. Repeat the heating and infusion 3-4 times until the apple slices become transparent. Ready-made hot jam to pour into small, pre-sterilized dry jars and hermetically cork. To make the jam a pleasant sour, you can use lemon instead of orange.

Watermelon honey

1 watermelon weighing about 6.5 kg.

Ripe watermelon thoroughly wash and dry. Cut the watermelon into slices, cut out the pulp with a knife and grind it in a bowl. Shred the watermelon pulp through a sieve and then strain the resulting mass through gauze, folded in 2-4 layers. Watermelon juice is poured into a saucepan, put it on a fire and heat until foam appears on the surface of the liquid. Remove the foam with a spoon and strain the juice through the folded gauze again. Again pour the juice into a saucepan and cook over medium heat, stirring constantly. When the content of the container is reduced by 8-10 times compared to the original quantity, check the "honey" for readiness. For this, it is necessary to pour a drop of "honey" on a cold porcelain plate: if the drop does not spread and retains its shape, the honey is ready. For a long-term storage watermelon "honey" needs to be poured into pre-sterilized dry jars and hermetically sealed. Water melon "honey" can serve as an excellent basis for the preparation of various alcoholic and non-alcoholic cocktails. The simplest recipe for making a tasty watermelon drink is to dilute the honey with cool boiled water.

Raspberry lime

2-3 limes, 250 grams of raspberries (fresh or frozen), 100 ml of cold vodka, 150 ml of cold lemonade, 75 g of sugar.

Limes (previously well-cooled) wash, cut in half and squeeze out the juice from the halves. Put raspberries into the blender bowl - (pre-frozen frozen raspberries), pour in sugar, pour cold vodka and lime juice and beat together. Prepare the raspberry mixture through a sieve to remove all the bones. Pour lemonade into the wiped out mass, pour over the glasses, decorate them with lime slices and immediately serve. To prepare a cocktail instead of raspberries you can use strawberries. If you exclude vodka from the cocktail, you will get a delicious and healthy cocktail, which will surely please the children.
