Meat pie I continue to introduce you to Swiss cuisine. Switzerland has long been known not only for its banks, but also for its richness and variety of dishes, whose recipes were influenced by the country's mixed culture: French, Italian, Romance and German. I submit for consideration Hursky meat pie, which is the specialty of my canton-Graubunden. It is made from short pastry with stuffing from minced beef, pork and lamb. Ingredients:- Wheat Flour 150 g
- Flour, wholemeal, 150 g
- Salt 1 tsp.
- Butter 150 g
- Eggs chicken 1 pc.
- Cream 2 tbsp. l.
- Wine red dry 100 ml
- Cream 100 ml
- Marjoram 1 tbsp. l.
- Parsley fresh 2 sprigs
- Salt 1 tsp.
- Mixture of peppers 0.3 tsp.
- Eggs chicken 1 pc.
- Milk 1 tbsp. l.
- Leeks 100 g
- Sausages of beef raw 100 g
- Bread white 60 g
- Milk 100 ml
- Beef minced 500 g
- Step 1 Prepare the ingredients: flour, egg, cold butter, cream, wine, minced beef, beef sausage, bread, leeks, salt, pepper, a tablespoon of marjoram and parsley.
- Step 2 Sift the flour and cut the butter into pieces.
- Step 3 With a mixer or hands, dough until the crumbly mass.
- Step 4 Add the egg and a couple of tablespoons of cream in the flour.
- Step 5 We collect the dough into 2 balls by hand, do not knead.
- Step 6 We wrap it in a food film and send it to the refrigerator for 1 hour, it is possible in the freezer for 30 minutes.
- Step 7 Bread is cut into small pieces and poured 100 ml of milk. We will set aside, so that the milk is absorbed.
- Step 8 In a heated frying pan with a small amount of oil, saute forcemeat for 2-3 minutes.
- Step 9 Cut the onion and send it to the meat.
- Step 10 Immediately add the sausage cut into squares. We're in the way.
- Step 11 Pour in the wine. We're in the way.
- Step 12 Immediately pour in the cream, stir and stew on medium heat until the liquid evaporates.
- Step 13 Turn off the fire, add the prepared bread. Season with marjoram and parsley, salt and pepper to taste.
- Step 14 Pour 1 protein into the filling and mix.
- Step 15 Roll the dough straight on paper into a circle with a diameter of 30 cm and a circle - 26 cm. We cut the smaller circle on a flat line.
- Step 16 On a larger circle of dough, put the filling, leaving a place to the edge of 3-4 cm. We wrap up the dough.
- Step 17 We put the smaller circle on top. Well stick the edges along the seam.
- Step 18 From the remaining cuttings of the dough squeeze out the figures. We spread them from above. Then call the yolk with a spoonful of milk and abundantly grease the whole pie.
- Step 19 Bake in a zarene warmed oven at 200 ° C for about 35-40 minutes. We serve the table hot. Cakes are well suited for vegetables and green salads. Bon Appetit!
