Porridge with vegetables Very few people know about the benefits of oatmeal porridge, and it's certainly hard to overestimate it. And if we are used to the recipes of sweet porridge with fruits, honey, jam, dried fruits, then I propose the opposite option with fried vegetables. And while the season of vegetables remains open, you need to have time to take advantage of this moment! Such porridge is not less useful and tasty, and it can be eaten not only for breakfast, but also for lunch and dinner - this figure does not hurt, and hunger, for sure, will disappear. Vegetables are cooked very quickly while cooking porridge, and time delicious and healthy breakfast-lunch-dinner does not take away much!
Ingredients:- Oat flakes 100 g
- Pumpkin 50 g
- Carrot 1 pc.
- Onion 0.5 pcs.
- Pickled cucumbers 2 pcs.
- Sunflower unrefined oil 2 tbsp. l.
- Tomatoes 1 pc.
- Salt 0.5 g
- Water 300 ml
- Step 1 To prepare oatmeal with vegetables, we need oatmeal, pumpkin, carrots, onions, gherkins, vegetable oil, tomatoes, salt. Flakes can be taken any to taste (I have fine grinding).
- Step 2 Wash the flakes until the water is clear, salt and boil the porridge.
- Step 3 Oatmeal should not turn out to be liquid, thick enough to not spread over the plate.
- Step 4 Wipe the pumpkin and carrots, rub on a coarse grater. Tomatoes, onions and gherkins are cut into small cubes.
- Step 5 Heat the vegetable oil in a frying pan and fry onions, cornichons and carrots until golden.
- Step 6 Add the pumpkin to the fried vegetables and cook for another 1 minute.
- Step 7 Add the cut tomatoes, salt and fry until the carrot is soft for another 5 minutes.
- Step 8 Vegetables should be completely absorbed by the extracted juice. Depending on the variety of tomatoes (there are sorts not juicy with hard pulp, which do not give juice very well), you can add a couple of spoonfuls of water or tomato juice, close the lid and put out another couple of minutes.
- Step 9 Put the porridge on a plate, put the roast vegetables on top, give the porridge to soak and serve.
