Vegetarian soup of wisdom About soups, you can probably say eternity! Someone is sure that this is a boring and even tedious dish; someone prepares them for usefulness, but does not feel special pleasure from using; and of course, there are a huge number of people really in love with soups! And it is right! Soup is a tasty, useful, interesting dish that can always be different, and always surprise with its shape, color, consistency and taste! Today we are preparing pumpkin and poppy soup. Someone will say that if it's compatible products, then something sweet. But believe it not! The soup is light and aromatic - turmeric, nutmeg, coriander and bay leaves will give a unique smell, and pumpkin, poppy and potatoes - saturation! Eastern sages believe that the use of this soup improves memory and thinking.
Ingredients:- Pumpkin 150 g
- Potatoes 3 pcs.
- Carrot 1 pc.
- Water 4 tbsp.
- Poppy 2 tbsp. l.
- Bay leaf 1 pc.
- Ground nutmeg 0.75 tsp.
- Ground coriander 0.5 tsp.
- Turmeric 0.75 tsp.
- Butter 20 g
- Parsley fresh 0.5 bunch
- Salt 2 pinch
- Step 1 To make soup you need fresh pumpkin, potatoes, carrots, parsley, poppy, butter and spices.
- Step 2 Vegetables - potatoes, carrots and pumpkin peel and cut into cubes.
- Step 3 Pour 4 cups of cold water into the pan, add poppy and potatoes - cook for 15-20 minutes until the potatoes are ready.
- Step 4 Heat the butter in the frying pan, add the bay leaf and fry it for 1 minute, then add the coriander, nutmeg and turmeric - cook for another 30 seconds.
- Step 5 Then add pumpkin and carrots and fry over medium heat until cooked for 10-20 minutes.
- Step 6 Finished vegetables add to the broth and cook for 2-3 minutes.
- Step 7 Then add finely chopped parsley and salt to taste.
