Pea puree is well served on a garnish for meat. Before cooking, peas can be soaked in cold water for 5-8 hours from a ratio of 2: 1 - this will in the end reduce the time of cooking mashed potatoes. Soaking also allows peas to retain their shape and not crack during cooking. The taste of puree from soaked and uncooked peas is markedly different. Preparation: Peel the peas and rinse under a tap of cold water. Place peas in a saucepan and add water. Bring to a boil, reduce heat, cover and cook until done. Drain the water, leaving some liquid in a saucepan. Wipe the peas or stir until smooth with a blender. Add the butter, salt, mix until smooth and serve.
