The coating mixture should be as fluid as possible, so that it can be easily applied to meat, and also to the extent of viscous so as not to drain. From these considerations, honey is better to take liquid. Soak fillets in saline is better at night or day, but at least 3 hours, otherwise the meat will be dry.
