- olive oil - 2 items. spoons
- large sweet potatoes, cut into cubes - 2 pieces
- curry powder - 5.5 teaspoons
- red onion, chopped - 1/2 cup
- spinach - 650 grams
- Balsamic vinegar - 1 st. a spoon

Heat the oil in a large frying pan over medium heat. Add the sweet potatoes and fry, stirring until it begins to soften, from 8 to 10 minutes. Add the curry powder. Fry for 1 minute. Add 1/2 cup water and onion. Fry, stirring until the water evaporates and the potatoes become soft and brown, about 10 minutes. Put in a bowl. In the same frying pan fry the spinach in two batches. Add the second batch after 2 minutes. Add finished spinach to the potatoes. Mix with vinegar, season with salt and pepper.
