Rubic soup with dumplings This recipe from the Canadian chef Michael Smith. Italian potato dumplings are almost the same as Ukrainian dumplings. The difference is that our dumpling dumplings are cooked from boiled mashed potatoes, and for Italian potatoes baked and the logic is certainly there: in baked potatoes, much less moisture. Red fish can be anything: salmon, trout, salmon. It turns out easy and delicious soup.
Ingredients:- Trout 400 g
- Potatoes 2 pcs.
- Carrot 1 pc.
- Celery root 100 g
- Leeks 50g
- Eggs chicken 1 pc.
- Flour, wheat 70 g
- Sea salt 5 g
- Water 2 l
- Step 1 For cooking fish soup with Italian dumplings you need: trout, potatoes, celery root, leeks, carrots, eggs, flour and salt.
- Step 2 We clean the fish and fill it with water. We make broth for soup. When the water boils - remove the foam, after 20-25 minutes it will be ready.
- Step 3 Two large potatoes bake in the microwave. Can and in the oven, but it will be much longer.
- Step 4 The celery root is cut into cubes.
- Step 5 Carrots are also cut into cubes.
- Step 6 Chop the leeks and add to carrots and celery. We admit vegetables in a frying pan in a small amount of vegetable oil. You can take olive or sunflower.
- Step 7 Put the vegetables in a strained fish broth and cook for 10-15 minutes.
- Step 8 Baked potatoes are cleaned and rubbed on a grater.
- Step 9 To the potatoes add the egg and flour from the calculation: 1 part of the flour in 2 parts potatoes. Solim and knead a fairly thick dough on dumplings. We make sausage from the test.
- Step 10 Cut the sausage into pieces about 2 cm wide. Squeeze each piece with a fork. We send the dumplings to the freezer for 20-30 minutes.
- Step 11 When the dumplings are frozen, we throw them into the soup. Cook for about 7-10 minutes until cooked. Solim and season the soup to your liking. We put the pieces of fish in a bowl and sprinkle with greens.
