Legendary dessert Divine dessert, my favorite Tiramisu! It is really delicious and delicate! This dessert has millions of fans, and it's not surprising! It is for this recipe that the most popular Italian dessert turns out to be correct and ideal in my opinion - it keeps the shape well when cut into portions, does not "float", and also has ideal proportions relative to taste qualities! The main secret is that yolks and sugar are whipped in a water bath, but the quality of the products used to make desserts also plays a big role - Mascarpone cheese (and exactly Mascarpone!) And chicken eggs should be fresh, coffee freshly ground (not mashed) ), savoyardi cookies are also not recommended to replace with other cookies (unfortunately, with a biscuit cookie home-made Tiramisu is not the same!). Be sure to try Tiramisu, who has not tried it, you will fall in love with it at first sight, with the first bite! To cook actually Tiramisu is not difficult, the main thing is to wait for the dessert to be properly brewed, and then it's up to the little one to cut off a piece and enjoy !!!
Ingredients:- Mascarpone cheese 500g
- Sugar 4 tbsp. l.
- Savoyardi cookies 400g
- Eggs of chicken 4 pcs.
- Water boiled 400 ml
- Freshly ground coffee 8 tsp.
- Sugar 1 tbsp. l.
- Wine red dessert 60 ml
- Cocoa powder 2.5 tbsp. l.
- Step 1 To prepare Tiramisu we will need Mascarpone cheese, savoyardi cookies, chicken eggs, red dessert wine, sugar, boiled water, freshly ground coffee, cocoa powder.
- Step 2 To begin with, you need to make coffee, so that by the time the dessert is assembled it has cooled down completely. We boil water. Freshly ground coffee is poured over with boiling water, add 1 tbsp. Sahara. We mix and leave, let it cool down.
- Step 3 This time we separate the yolks from proteins, four yolks and sugar connect.
- Step 4 In a small diameter pan or in a ladle we boil the water (we make a steam bath), put a bowl of yolks and sugar on it and, making the fire average, start the mixer at an average speed to beat the yolk-sugar mixture. Take care that the water does not boil strongly and the bowl does not touch the water.
- Step 5 So we beat about 10 minutes: the sugar should dissolve completely, the mass will lighten and increase significantly in volume, and from the mixer there will remain distinct traces-grooves.
- Step 6 Remove the bowl of yolk cream from the steam bath.
- Step 7 We introduce the Mascarpone cheese into the yolk cream.
- Step 8 When entering the cheese, mix very gently, slowly, gently so that the mass becomes a uniform creamy consistency.
- Step 9 Separate whisk cold proteins (3 pcs.) To stable peaks. Beat in clean dishes, if desired, you can pour a spoonful of sugar at the moment of whipping.
- Step 10 We introduce proteins into the cheese cream. Do this in a few tricks, three or four.
- Step 11 Each time the protein portion needs to be kneaded clockwise by a smooth movement from the bottom up. It is best to use a silicone or wooden spatula for this purpose.
- Step 12 So, the cream for Tiramisu is ready.
- Step 13 Cool the coffee, strain it, pour in the wine. We pour coffee with wine into a flat container. With a quick movement, we dip each biscuit from two sides into coffee and immediately put a large rectangular or square shape pre-lined with baking parchment. It is also desirable that the shape be with removable rails, but this is not the point.
- Step 14 We spread the cookies with a dense bottom layer.
- Step 15 On the bottom layer of the cookie we spread half of the whole cheese cream.
- Step 16 Align the surface of the cream.
- Step 17 Also make the second layer of the cookie.
- Step 18 Lay the remaining cream on the second layer of cookies, level it.
