Whisk butter and sugar together in a large bowl with a mixer. Add the egg and whip. Stir with vanilla extract. In a medium bowl, mix the flour, lavender flowers and salt. Pour the flour mixture into a creamy mass and whip until smooth. 2. Sprinkle the hands with flour and lay the dough on a piece of polyethylene film. Roll out in the form of a log about 25 cm in length. Wrap the dough with polyethylene and put in the freezer for 30 minutes or in the refrigerator for at least 1 hour. 3. Preheat the oven to 150 degrees. Remove the cooled dough from polyethylene and cut into pieces about 1 cm thick. If desired, use a small round knife (for cleaning apples) to make a round hole in each cookie. Sprinkle the cookies on one side with sugar. Put the strewed side up on a baking sheet lined with parchment paper or a silicone rug, at a distance of 5 cm from each other.
