Mayonnaise from apples An interesting sauce, which is prepared on the basis of apple juice. Juice is better to take home, natural without pulp. As a thickener for this sauce, potato starch and apple flesh are used. In this sauce all spices, characteristic for mayonnaise - vinegar, salt, sugar, mustard, pepper, are used, hence the name. But there is in it and additional notes, which brings ginger and nutmeg. The sauce is lean. It perfectly fits to vegetable cutlets, fish, potato pancakes!
Ingredients:- Apple juice 250 ml
- Ginger dry 0.1g
- Nutmeg Ground 0.1 g
- Black pepper powder 0.2 g
- Salt 1 tsp.
- Sugar 1 tsp.
- Table vinegar 1 tbsp. l.
- Mustard 3 tsp.
- Potato starch 1.5 tbsp. l.
- Apple 2 pcs.
- Sunflower refined sunflower oil 100 ml
- Step 1 For the preparation of apple mayonnaise, we need mustard, apple, sunflower oil, vinegar, starch, sugar, apple juice, salt, pepper, ground ginger and nutmeg.
- Step 2 Apple juice (200 ml) to combine with starch.
- Step 3 Peel the apples and cut them.
- Step 4 Combine apples with vinegar, sugar and 50 ml of apple juice.
- Step 5 Boil 6-7 minutes. Mash. Add mustard, salt, pepper.
- Step 6 Put the mass in the blender bowl. Add the sunflower oil.
- Step 7 Grind.
- Step 8 Put the apple mass in a saucepan. Add apple juice with starch.
- Step 9 Bring to a boil, but do not boil.
- Step 10 Add the hot mass of nutmeg and ground ginger. Mix.
- Step 11 Serve with fish, vegetable cutlets.
