1. Mix flour, salt, grated cheese and butter in a bowl of a food processor until a uniform consistency is obtained. Add about a cup of cream (or milk in half with cream) and mix. Continue to add 1 teaspoon of cream until the dough is well kept together. The dough should not be sticky. Add the chopped bacon and mix in the combine several times until it is evenly distributed throughout the dough. 2. Put the dough on a large sheet of parchment or waxed paper. Roll the dough into a long rectangle with a diameter of 2.5 cm. Turn it into paper and freeze for at least 3 hours. Preheat the oven to 200 degrees. Line the baking tray with parchment paper or a silicone mat. Cut the dough into slices about 6 mm thick. 3. Lay the slices on the baking sheet 1 cm apart. Bake until light brown, about 10 minutes. Cool on the counter. Serve the biscuits warm or at room temperature. Keep the biscuits in a tin for several days.
