Preheat the oven to 200 degrees. Put one sheet of phyllo on the work surface. Lubricate one side with melted butter. Put the second sheet of filo dough on top and grease the remaining oil. Cut the filo dough in half along, then each half into 4 pieces to make 8 rectangles. Lay out 4 rectangles on a baking sheet, lightly sprinkled with oil. Lay the remaining rectangles on top. Arrange 10 to 12 pieces of peach on each biscuit and sprinkle 1 teaspoon of brown sugar. Bake for 10 minutes. Remove from the oven and sprinkle the dough with the remaining sugar. Return to the oven and bake for 5 to 7 minutes until the sugar has melted.
