New Year merengi The term "meringue" in French means "kiss." And no wonder - this dessert is always sweet and easy! Invariably meringue (merenga) is a dessert of beaten sweet egg baked proteins, but there are two basic recipes - Italian meringue and Swiss, the principle of cooking the latter and is used in this recipe. Also in the protein mass, I added powdered green tea Matcha, due to which merengi turned out a pleasant light green color, with a well-palpable taste of tea. In appearance, meringues are like New Year trees, they can be used to decorate desserts, cakes, other pastries, or you can simply serve tea for dessert! "Fur-trees" look very impressive, especially on the eve of the New Year and Christmas holidays!
Ingredients:- Eggs chicken 3 pcs.
- Sugar 230 g
- Matcha Tea 10g
- Confectionery powder 10 g
- Step 1 For the preparation of meringue "Christmas trees" we will need only egg whites, sugar, confectionery powder, green powdered Matcha tea (or green food color, but then you will not feel the tea's excellent taste and aroma in meringues ...).
- Step 2 We connect sugar and proteins.
- Step 3 In a small pot, pour a little water, give it a boil, put on it a bowl of sugar and proteins. An important point - see that the water does not reach the bottom of the bowl with sugar and proteins, for this it is better to use a narrow pan. We make fire minimal. Constantly stirring the protein mass, we wait for the dissolution of sugar, but we need to ensure that the proteins are not too hot (the optimal temperature of the proteins is about 43 ° C).
- Step 4 When the sugar dissolves - remove the protein mass from the water bath.
- Step 5 Using a mixer, whisk the proteins at high speed to soft peaks.
- Step 6 Next, pour the powdered Matcha tea (or diluted green food color), carefully, but gently intervene it in the protein mass.
- Step 7 Whisk again with a mixer at high speed, but now to strong steady peaks.
- Step 8 Now we move the protein mass into a confectioner's bag with a nozzle-asterisk.
- Step 9 On the sheet of parchment for baking we set the "Christmas trees" - first, "draw" the base in a circle, fill the middle and bring it in a spiral to the top.
- Step 10 So we set the meringue until the protein mass is over. In total, I got 19 small Christmas trees.
- Step 11 We sprinkle meringue on the confectionery.
- Step 12 Bake in a preheated oven to 100 ° C for about 1 hour and 30 minutes.
- Step 13 We serve meringue "Christmas trees" for dessert or use to decorate baking, cakes, other desserts!
