Mustard was produced from ancient times, but gained real popularity in the IX century, being the main income item of French monasteries. That is why, having a message to the Ancient history of this wonderful product, I suggest preparing a tasty and fragrant bread in French style - with Dijon mustard and Provencal herbs. If you do not overdo it with mustard, the bread will not come out bitter, but very tasty, fragrant and spicy with a yellowish crumb. Ingredients:- Wheat flour 3 tbsp.
- Yeast dry 2 tsp.
- Mustard Dijon 20 g
- Sugar 2 tbsp. l.
- Water boiled 1 tbsp.
- Sunflower refined sunflower oil 2 tbsp. l.
- Provencal herbs 1 tbsp. l.
- Salt 7 g
- Sesame White 1 tbsp. l.
- Sunflower refined oil 1 tbsp. l.
- Step 1 For the preparation of mustard bread, we will need: warm water, sugar, salt, wheat flour, dry yeast, mustard, vegetable oil, Provence herbs.
- Step 2 In warm water dilute 2 tsp. without a hill of dry yeast.
- Step 3 Add 1 tsp. sugar (from the total volume) for feeding yeast and 5-6 st. l. flour (of the total volume). Stir thoroughly.
- Step 4 You will get a pretty thick opara. It is better to pour it into a bowl deeper, as it will rise strongly. In even deeper dishes, pour hot water and put a bowl of cauliflower in it, cover with a clean towel and leave for 20-30 minutes.
- Step 5 Opara rose "cap". Quickly whip it with a fork.
- Step 6 In a warm bowl, sift a little flour, add sugar and 3/4 tsp. salt.
- Step 7 Pour the spoon and begin to knead the dough, pouring the remaining flour gradually.
- Step 8 Add 2 tbsp. l. and continue to knead the dough.
- Step 9 Now turn the mustard - take 1 tsp. or 1 tbsp. l. - To taste (in the photo I have 2 tablespoons - it was a bit too much).
- Step 10 Pour 1 tbsp. l. a mixture of Provencal herbs. Also you can combine these herbs to your own taste or put any one kind of spice (rosemary, basil, thyme, savory garden, oregano, marjoram, tarragon).
- Step 11 Well knead the dough, evenly spreading the herbs on it. Form a ball from the dough and leave it to rest in a warm, dry, ventilated place under the towel for 1.5-2 hours.
- Step 12 The dough has risen. It needs to be kneaded a second time.
- Step 13 Lubricate the bread form with a small amount of vegetable oil and put the dough into it. Leave in a warm place under a towel to lift for 40-60 minutes. At this time, preheat the oven to 240 ° C.
- Step 14 Lubricate the loaf with water using a culinary brush and sprinkle with sesame seeds. Send bread to the oven: bake at 240 ° C for the first 5 minutes (when you see that the crust has turned brown - cover the form with foil), then leave the remaining 25-30 minutes at 200 ° C (bake already with foil).
- Step 15 Finished bread get out of the oven, let it stand for a while in the form. Lubricate the bread with butter or vegetable oil, and then cool on a towel.
