- sugar - 2 cups
- sprigs of fresh thyme, plus thyme for decoration - 12 pieces
- freshly squeezed lemon juice (about 24 lemons) - 4 cups
- vodka - 2 glasses
In a small saucepan, mix 2 cups of water with sugar and thyme, bring to a boil over high heat, stirring until the sugar dissolves. Remove from heat, allow to cool to room temperature. Pour the mixture through a fine sieve into a large glass cup. You should get 2 cups of syrup. Cover with a plastic lid and refrigerate. Pour the syrup into a large jug, mix together with lemon juice and decorate with thyme. Divide equally into 8 glasses, add ice. Serve immediately.
