The combination of a coffee dough with chocolate brings its own zest. You can experiment with additives, for example, instead of chocolate use a carob, and instead of coffee - chicory. Or completely bypass without coffee and chocolate, and just in one part of the dough add cocoa or jam. There are no eggs in the recipe. Their substitute is starch. Also, instead of starch, you can use the pulp of 1 banana, which will give the test elasticity. Have a nice tea!
Ingredients:- Wheat flour 3 tbsp.
- Cream of 10 ml
- Salt 5 g
- Butter 150 g
- Corn starch 1 tbsp. l.
- Water 2 tbsp. l.
- Vanillin 2 pinch
- Coffee instant 10 g
- Chocolate black 75 g
- Baking powder 1 tsp.
- Sugar 1 tbsp.
- Step 1 To make cookies, you will need butter, black chocolate, coffee (ground or soluble), flour, sugar, salt, vanillin, starch, baking powder and water.
- Step 2 Mix the flour, baking powder and salt, set aside.
- Step 3 Mix the softened butter 3-4 minutes at a low speed with a mixer. Gradually add sugar or powdered sugar, starch (diluted in water) and vanilla, beat well.
- Step 4 Mix the oil with flour, knead the elastic dough and divide into 2 parts.
- Step 5 In 1 part add coffee.
- Step 6 Carefully knead the hands until smooth.
- Step 7 Melt the chocolate in a water bath, adding cream.
- Step 8 Add the chocolate to the second part of the dough and carefully knead it with your hands.
- Step 9 Roll out the chocolate dough between two sheets of parchment paper about 0.5 cm thick and about 22x35 cm, knife forming a rectangle.
- Step 10 Repeat the same with the coffee test.
- Step 11 Transfer the chocolate dough to the coffee dough or vice versa (if you can not do it because of insufficient elasticity of the dough, then leave it in the cold for 30 minutes).
- Step 12 Twist the dough into a roll, then wrap the dough in parchment paper and refrigerate in the freezer for 1 hour. When cooling it is necessary to turn the roll at least once, so that it does not become flat on one side.
- Step 13 Preheat the oven to 200 ° C. Take the dough out of the refrigerator. Expand and cut in half with a sharp knife. Half of the test is returned back to the refrigerator so that it is cooled while the first half is baked. Using a sharp knife, cut the dough into rings of 1 cm.
- Step 14 Transfer to a baking tray and bake for 12 minutes.
- Step 15 It is necessary to leave a place between the cookies on the baking sheet, because as it bakes it will increase in volume and can stick to each other. Repeat the same with the remaining test.
