Make the dough. In a large bowl, whip together the flour, baking powder, salt and cinnamon. Set aside. In another large bowl, using an electric mixer, whip the butter and sugar. Add the egg and vanilla. Reduce the speed to low and gradually add a mixture of flour. Divide the dough in half. Wrap each part in a film, refrigerate in the refrigerator for 1 hour. Roll out the cooled dough to a thickness of 3 mm on a lightly floured surface. Cut out pastry cookies of various forms and put in the refrigerator for 10 minutes. The dough can be frozen for a period of 1 month. Preheat the oven to 160 degrees. Line the baking sheet with parchment, lay out the biscuits.
