1. Preheat the oven to 160 degrees. Extract corn kernels from cobs. Bring the cream in a saucepan to a boil, add the corn kernels, turn off the heat and let stand for 10 minutes. 2. Mix the corn mixture in a blender or food processor until a consistency of puree is obtained. Strain the mixture through a fine sieve. 3. Beat eggs and yolks, add a small amount of cream mixture to heat the eggs. 4. Stir eggs with creamy mixture and pepper sauce. 5. Pour the mixture into 6 oiled batch pots. 6. Bake for 30 minutes until the mixture thickens. Remove the cream brulee from the oven and allow to cool to room temperature. 7. Sprinkle a thin layer of cheese on top. 8. Using a burner or grill in the oven, make a golden brown crust on the surface of the dish.
