Culinary recipes of pancakes

But if you can not get rid of them completely, you can skip the liquid dough through a sieve, then stand it for twenty or thirty minutes and, with a thin layer of pouring into the frying pan, begin to prepare pancakes.

Guriev pancakes. For these pancakes, we need four eggs, six hundred grams of wheat flour, half a liter of kefir and one hundred grams of vegetable oil. Sugar and salt are added to taste. First of all, we separate the yolks from proteins. Then rub the yolks with butter, salt and sugar, add flour to the mixture and mix thoroughly. After that, we add kefir to the mixture, make it thicker, bring to the consistency of sour cream. And in the end we add egg whites to the resulting mass, we get in the way, and immediately start baking pancakes.

Buckwheat pancakes. We need two glasses of wheat flour, as many buckwheat, four glasses of milk, three eggs, one hundred grams of cream, two tablespoons of butter, a teaspoon of vegetable oil, a tablespoon of sugar and salt to taste. First of all, you need to warm two glasses of milk and dilute yeast in milk. Then we pour buckwheat flour into empty dishes, add milk with yeast and put it in a warm place. As soon as the dough for pancakes starts to rise, stir it with a spoon, merge the remnants of milk, add wheat flour and mix thoroughly. The dough is again taken away to a warm place, and then there we add the egg yolks, grown with butter, sugar and salt. Stir the resulting mass. Then whip the cream, add egg white to them and beat again and add the resulting mixture into the dough. And we mix everything in the final time. After we remove the finished mass in a warm place, and after a quarter of an hour you can start to prepare pancakes.

Pancakes on soda. We need a glass of wheat flour, a glass of buckwheat, three eggs, four glasses of milk, four tablespoons of butter, a half teaspoon of soda, citric acid (at the tip of the knife), a tablespoon of sugar and salt to taste. Pour all the flour into the pan, dilute it with warmed milk, add yolks, butter and sugar with salt. The resulting mass must be mixed well. We raise soda and citric acid in different glasses with water, in proportion one to six. Then mix the contents and, while the soda still hisses, mixes it all with the dough. Then add the thoroughly whipped egg whites into the dough, and immediately begin to bake the pancakes.

Yeast pancakes. To make the dough, you need two glasses of wheat flour, or a glass of buckwheat and wheat, an egg, two glasses of milk, twenty grams of butter, the same amount of yeast, a tablespoon of sugar and a half teaspoon of salt. We heat three-fourths of the total milk, add yeast, eggs, flour and sugar to it. Thoroughly stir the ingredients to a homogeneous mass, add the melted butter and mix again. Then we remove the dough in a warm place for three or four hours. When it starts to rise, add the remains of hot milk and mix. Then, when the dough starts to rise again, we start to prepare pancakes.

For baking pancakes are suitable cast iron or specialized frying pans. Furnace them on the stove. Before preparing pancakes, you do not need to wash the frying pan with water, you need to put it on the fire, cover with a thin layer of butter and large salt and warm well. When the frying pan slightly cools down, it needs to be wiped off with damp paper - so we remove the dirt and carbon deposits.
