In a medium frying pan heat 1 tablespoon oil over medium heat. Add onions, potatoes, and rosemary, season with salt and pepper, stir. Cover and fry for 10 minutes. Remove the lid and continue cooking, stirring occasionally until onions and potatoes become soft, about 5 minutes. Meanwhile, in a bowl, beat the eggs, egg whites, parsley, 3/4 teaspoon of salt and 1/4 teaspoon of pepper. Add the remaining tablespoon oil to the vegetables in the frying pan. Pour the egg mixture into a frying pan. Fry on low heat for about 15 minutes until golden brown. Put the prepared omelet on a dish and cut into slices.
