Oatmeal cookies with white chocolate and almonds

1. Preheat the oven to 190 degrees with the rack in the top position. Line the baking tray with parchment paper. Whisk butter and sugar together in a medium bowl. Add eggs and vanilla extract, beat until homogeneous. 2. Place a steel knife in the food processor and chop the oatmeal. 3. Add oat flakes to the egg mixture together with flour, baking powder, soda and salt. Stir until a uniform consistency is obtained. 4. Add white chocolate and gently stir. 5. Put the almonds in the food processor and grind them. Add almonds to the dough and mix. 6. Using a spoon, put the dough on a baking sheet in the form of small balls. Cookies should be located at a distance of 2.5 cm from each other. 7. Lightly press down the balls to get cakes. Bake the biscuits in the oven for 4 minutes, then turn the baking sheet and continue baking for another 3-5 minutes until the cookie turns brown at the edges. The cookie should be soft, but not sticky. 8. Allow the liver to cool completely and store it in an airtight container.
