And do not need a month to wait, when rice vinegar ripens, ask friends-travelers to bring a certain sort of rice - all this is now available, especially in cities. The only difficulty is to properly boil rice and cook mushrooms, but for those who spend every day in the kitchen at least half an hour, this will not be a problem. Ingredients:- Round-grain rice 300 g
- Water 350 ml
- Vinegar rice 2 tsp.
- Sugar 2 tsp.
- Seaweed nori 4 pcs.
- Shiitake Dried 30 g
- Soy sauce 3 tbsp. l.
- Pepper black ground 1 pinch
- Step 1 To prepare the rolls, take rice, nori leaves, dried shiitake mushrooms, soy sauce.
- Step 2 Let's start with the mushrooms: shiitake pour boiling water and leave to infuse for 1 hour.
- Step 3 Then drain the water, pour the mushrooms with fresh water, bring to a boil and cook for 1 hour at low heat.
- Step 4 Cool the mushrooms, cut off the leg, and cut the hats with straw.
- Step 5 Preheat 2-3 tablespoons of soy sauce and fry the mushrooms for 2-3 minutes, adding a pinch of black ground pepper and stirring constantly.
- Step 6 300 grams of rice rinse well under running water, so that the drained water becomes almost transparent.
- Step 7 Pour 350 ml of cold water over the fire, cover it to a boil without the lid, then cover and cook for 12 minutes.
- Step 8 Remove the rice from the fire and let it sit under the lid for another 10 minutes.
- Step 9 Prepare the dressing: combine 2 teaspoons of rice vinegar, warm water and sugar. Stir well to allow the sugar to dissolve as far as possible.
- Step 10 In the ready hot rice pour in the dressing, mix everything well and cool.
- Step 11 Cut the nori sheets in half. Distribute the rice on half of the nori with a uniform layer about 1 cm thick.
- Step 12 Then put the cut shiitake.
- Step 13 Gently and tightly wrap the roll. Of this number, 7-8 rolls are obtained.
- Step 14 Ready rolls leave to lie down for 5 minutes with a seam down.
- Step 15 Cut each roll into 6 equal parts. Serve rolls with soy sauce, marinated ginger and wasabi.
