It is believed that the creator of this salad - the French chef Lucien Olivier - has never discovered all the secrets of his cooking, that's why everyone who takes up his making is guided either by family traditions or by his own taste preferences. The only thing that many experts and cookery historians agree on is that in the opinion that originally the main ingredient in olivier was boiled hazelnut meat. Many of us hardly ever have to try this dish in its original performance, but you can try to approach the author's recipe. To do this, it is sufficient to abandon the idea to crumble a half-cooked sausage or ham stick into the salad, and replace these products with ordinary chicken meat.
