Salted pie with vegetable filling In thin lavash we usually put cheese, greens and wrapped in a roll. But this time the Armenian cake will serve as a flour base for a pie with vegetable filling. Perhaps this recipe can be called lazy lasagna or pseudo-pie. Since instead of making a dough, we use ready-made thin lavash. Eggplants and cottage cheese serve as fillings. Of course, you can add any ingredients: chicken, bacon, cheese, zucchini, etc. The obligatory condition is to grease the layers with sauce. By the way, and here you can vary: tomato sauce or mayonnaise, or even pesto. Agree that such a pie will cope with the task of "deliciously fed".
Ingredients:- Lavash thin 3 pcs.
- Pepper black ground 4 pinch
- Salt 1 tsp.
- Olive oil 50 ml
- Curd 200g
- Tomatoes 3 pcs.
- Pepper sweet 1 pc.
- Eggplant 3 pcs.
- Garlic 5 denticles
- Cilantro fresh 1 bunch
- Tomatoes 400 g
- A mixture of Italian herbs 1 tsp.
- Step 1 For this pie, take: 3 sheets of thin lavash, 3 medium eggplants, 3 large fleshy tomatoes, sweet pepper, garlic, coriander, a mixture of Italian or Provencal herbs.
- Step 2 Eggplant wash, cut into slices 0.5 cm wide, pour salted water and leave for 15 minutes, then drain the water and gently squeeze eggplant.
- Step 3 Scald the tomatoes with boiling water, peel and finely chop with a knife.
- Step 4 Peel the garlic from the skin, 4 cloves large chop and 1 leave (needed later).
- Step 5 In a heated pan, pour 2 tablespoons of olive oil, add chopped garlic and spices. Fry for 1 minute.
- Step 6 In a frying pan add the tomatoes, cover and simmer on low heat for 15-20 minutes.
- Step 7 Kinzu wash and chop with a knife.
- Step 8 In the tomato sauce add coriander, squeeze out the remaining cloves of garlic, salt and pepper. Stir and let cool.
- Step 9 From the sweet pepper, extract the seeds and cut into thin rings.
- Step 10 In a frying pan with the addition of oil, fry eggplant and pepper for 5-7 minutes.
- Step 11 In the cottage cheese add pepper and salt to taste. To stir thoroughly.
- Step 12 Grease the baking sheet with olive oil and pour over the pita bread. Lubricate with tomato sauce.
- Step 13 Add the curd and cover with the next layer of pita bread.
- Step 14 Lavash smear with sauce and lay the eggplant with pepper.
- Step 15 Finishing, the third layer of pita bread is also greased with tomato sauce and cottage cheese. Lubricate the edges with olive oil. Garnish with greenery.
- Step 16 Cover the cake with a foil (glossy surface inside) and put in the oven preheated to 190 ° C for 20 minutes.
- Step 17 Then remove the foil and bake until golden brown for about 10 minutes. Pie a little cool and serve with a green salad.
