Macaroni is loved not only in its homeland, but in many other countries of the world. Although, of course, it was the Italians who succeeded in this matter. Pasta is festive and everyday, vegetable and fish, meat and cheese. Hundreds of options and, nevertheless, there is room for imagination. Do not be afraid to experiment, add your favorite spices and products. The main thing in this process is high-quality pasta, made exclusively from hard wheat varieties. Choosing such a paste you get not only delicious pasta, but also useful.
Ingredients:- Spaghetti 400 g
- Pepper black ground 0.25 tsp.
- Thyme (Thyme) dry 0.25 tsp.
- Rosemary dry 0.25 tsp.
- Oregano dry 0.25 tsp.
- Olive oil 50 ml
- Garlic 3 denticles
- Onions 3 pcs.
- Carrot 1 pc.
- Tomatoes 3 pcs.
- Eggplant 1 pc.
- Salt 1 tsp.
- Step 1 To prepare the lean paste, take: 1 large eggplant, 400 grams of spaghetti, 3 tomatoes, 1 carrot, 2-3 onions, 2 cloves of garlic, dry oregano, rosemary, thyme, salt and pepper.
- Step 2 Carrots are rubbed on a coarse grater. Cut the onions into rings or semirings. Garlic is chopped large.
- Step 3 Eggplant chop into large cubes.
- Step 4 Cut the tomatoes as well as the eggplant.
- Step 5 Lightly heat the frying pan and add the olive oil. After 1 minute, add spices and garlic. Fry for 2 minutes.
- Step 6 In the frying pan add onion and fry for 3 minutes. Then add the carrots. Vegetables fry for 2-3 minutes.
- Step 7 Add eggplant to vegetables and simmer for 5 minutes.
- Step 8 Put the tomatoes in the frying pan, increase the heat and fry for 3-5 minutes. Then reduce the heat to a minimum and simmer the gravy for 10-15 minutes.
- Step 9 Boil the spaghetti in salted water, according to the instructions on the package.
- Step 10 In the stewed vegetables squeeze out 1 clove of garlic and serve with spaghetti.
