Porous pancakes with berries This recipe produces not only beautiful - with lots of holes, an appetizing roast crust and an unusual blue-violet color - pancakes, but also to taste, because the dough with the addition of blackberry puree and lemon peel instantly acquires additional flavors! Serve these pancakes for dessert, sprinkled with powdered sugar and decorated with fresh berries!
Ingredients:- Blackberry 200g
- Eggs chicken 2 pcs.
- Milk 400 ml
- Lemon 0.5 pcs.
- Sugar 3 tbsp. l.
- Butter 75 g
- Soda 0.5 tsp.
- Wheat flour 2.5 tbsp.
- Step 1 Prepare the necessary ingredients: flour, milk, eggs, sugar, blackberries, butter, lemon zest, soda.
- Step 2 Mild butter, sugar and eggs whisked with a whisk in a deep bowl until a smooth creamy mass is obtained.
- Step 3 Introduce milk at room temperature and mix it into the egg-and-oil mixture.
- Step 4 Put the blackberry berries in the bowl of the blender and beat until smooth mashed. Enter the blackberry mash into the milk mixture, also add crushed lemon zest and mix.
- Step 5 Add soda and wheat flour - so much to make a dough of pancake consistency. We knead it with whisk until uniform.
- Step 6 Separately beat whites until soft peaks and enter gently, in a circular motion, into the dough.
- Step 7 Bake pancakes in the usual way on a hot, oiled frying pan on both sides.
