Rice dessert with raisins

1. Rinse and soak in large quantities of water for 2 hours. 2. Twenty minutes before rice is ready, mix 4 cups of coconut milk, salt, cinnamon, ginger, cloves and nutmeg in a medium saucepan. Bring to a boil over high heat. Reduce the heat to medium, cover and boil for 15 minutes. 3. Drain the water from the rice and add to the pan. Stir and bring to a boil over medium heat. 4. Reduce heat to low and cook until rice absorbs liquid. 5. Add sugar and raisins, mix and bring to a boil over moderate heat. Reduce the heat to low and boil for another 15 minutes without stirring. 6. Add 3/4 cup of coconut milk and mix. 7. Increase the fire to medium and cook for about 20 minutes. Remove the spices from the pan. 8. Spoon the rice dessert onto the plates. Allow to cool at room temperature before serving. Keep closed in the refrigerator.
