Salad from aubergines, sweet peppers and tomatoes Salad "Troika" got its name because of the number of products that it uses. Namely on 1 portion it is necessary 3 eggplants, tomatoes, sweet peppers and accordingly 3 onions. The size of vegetables should be average. To ensure that the salad caviar is delicious, all vegetables should be well ripe, gaining flavor and juice. Cook the dish better in a large saucepan or even a pelvis, so that the vegetables do not crush each other and do not lay very thick. One serving produces one jar with a volume of 1 liter, but in general it is more convenient to cover such salads in half-liter jars. It's more practical: it was opened and eaten! In the process of conservation, sterilization of cans and lids plays an important role. On the one hand, this is quite a troublesome business, but on the other it will be very insulting if the lid on the bank suddenly swells or explodes at all! Therefore, before folding the salad on the banks, they should be held over the steam for 2-3 minutes, and the lids boil for 5-7 minutes.
Ingredients:- Eggplant 3 pcs.
- Pepper sweet 3 pcs.
- Onions 3 pcs.
- Tomatoes 3 pcs.
- Table vinegar 1 tbsp. l.
- Sugar 1 tbsp. l.
- Salt 1 tsp.
- Sunflower refined oil 70 ml
- Step 1 To prepare caviar salad, we take medium eggplants, well ripe tomatoes, colorful peppers, onions, vegetable oil, vinegar (7-9%) and spices.
- Step 2 Eggplant is well washed and cut into circles up to 1 cm thick.
- Step 3 Peppers are well washed, remove seeds and cut.
- Step 4 Wash tomatoes, peel and cut into 4 pieces.
- Step 5 Cut the onion into thin semicircles.
- Step 6 At the bottom of the container, in which you will prepare a salad, pour 70 ml of vegetable oil, 1 tbsp. l. vinegar, add 1 tbsp. l. sugar without a slide and 1 tsp. salt with a slide.
- Step 7 Put the first layer of tomatoes.
- Step 8 Then cut the eggplant.
- Step 9 Next layer is sweet peppers and then onions.
- Step 10 Put the container on a slow fire and cover with a lid. Cook 40 minutes from the time of boiling.
- Step 11 Vegetables periodically stir gently, not letting the caviar burn.
- Step 12 Place the hot caviar in sterilized jars and roll it with tin lids. And then wrap up for 12 hours to conduct additional sterilization.
