Cream soup of lentils and eggplant Shredded soups, as a rule, are popular with people with a special diet or with obvious lovers of such dishes. And the latter, oddly enough, in the minority. Soup, as such, has an ancient and rich history. And with the development of civilization, the technology of cooking this dish has been improved. At some point, soups began to cook on the basis of the broth, which was called the "elixir of life." And it should be noted, this expression is relevant to this day. And as for soup-mashed potatoes, it is relatively "young," the first mentions date back to the 18th century. It is difficult to say that it has subjected chefs to grind the contents of soup in a mess: concern about dietary nutrition of the population or the subtlety of their tastes ?! In any case, we are grateful to them for the idea.
Ingredients:- Eggplant 300 g
- Lentil red 100 g
- Onions 1 pc.
- Garlic 2 cloves
- Tomatoes 300 g
- Olive oil 20 ml
- Basil purple fresh 0.25 bunch
- Bay leaf 2 pcs.
- Pepper black ground 4 pinch
- Salt 0.5 tsp.
- Step 1 To prepare this soup, take: eggplants, tomatoes, garlic, red lentils, pepper, salt, vegetable oil. Ingredients in the table are given for a pot of 1.5 liters.
- Step 2 Lentils, rinse with water, add bay leaf and cook on low heat for 15 minutes.
- Step 3 Eggplant peel, cut into cubes.
- Step 4 Fry in olive oil for 5 minutes.
- Step 5 Onion chop large. Garlic finely chopped.
- Step 6 Toss the tomatoes with boiling water, peel and chop.
- Step 7 In a frying pan with the addition of oil, fry the onion until golden brown.
- Step 8 Add the tomatoes and garlic to the onions. Fry 3-5 minutes.
- Step 9 Separate the basil leaves from the stems and chop them up.
- Step 10 From the pan where lentils are brewed, take out the bay leaves and add the eggplant. Cook for 5 minutes.
- Step 11 Then add the tomato dressing to the pan. Salt and pepper to taste. Boil another 5 minutes.
- Step 12 Remove the soup from the fire. Add chopped herbs. In principle, at this stage, you can finish the preparation of soup, if you do not like it in a puree state.
- Step 13 Well, if you prefer soup-puree, grind it with a blender, but not much. Serve with croutons, sprinkle with flax seed.
