Salad of squid and Peking cabbage. Literally ten years ago, many of us did not know what the different exotic dishes look like for us, but they did not even suspect the existence of some completely ordinary products. For example, we knew about cabbage that it was white and colored, and the names of kohlrabi, broccoli and others like them were pleasant to caress the ears, but were not associated with an ordinary vegetable. Few knew what the Peking cabbage looks like. About squid heard everything, but to dream that this sea inhabitant will appear on their table, too few have dared: unless in a canned kind. Fortunately, those times are long past, in the stores the shelves are breaking and not from such delicacies. Therefore salad with squids is not exotic now, but quite expected dish both on festive and on everyday table. However, you can prepare it in hundreds of different ways. That salad with squid, which we want to offer you, is both hearty and light, as it contains a lot of fresh vegetables - the same Peking cabbage, sweet pepper, and greens. It is prepared simply and quickly, if you do not take into account the time that squid will spend in the brine.
Ingredients:- Squid 700g
- Pork cabbage 0.5 pcs.
- Pepper sweet 1 pc.
- Onion 0.5 pcs.
- Mayonnaise 2 tbsp. l.
- Fennel dried 1 tsp.
- Pepper black ground 1 pinch
- Fresh dill 0.5 bunch
- Salt 3 pinch
- Table vinegar 2 tbsp. l.
- Step 1 To prepare the salad, you will need Peking cabbage, squid, sweet pepper, onion, mayonnaise and spices.
- Step 2 Squid washed well, remove the insides and chitinous stem. Then, turn over with boiling water so that the top film curls.
- Step 3 Then rinse under cold water, flushing the film (if the water is not all washed off, the squid can be easily cleaned by hand).
- Step 4 In a saucepan bring to boil well-salted water with the addition of dry fennel. Dip squid in boiling water, boil for 30-40 seconds, then remove from heat, cover and let stand for 15 minutes. After squid remove and cool.
- Step 5 In the meantime, chop the Pekinese cabbage and sweet pepper into thin strips.
- Step 6 Half of onions cut into thin half-rings and pour vinegar, leave the onions for 10-15 minutes.
- Step 7 Chop the squid off calamari.
- Step 8 Combine cabbage, pepper, squid, finely chopped dill, marinated onions, 2-3 tablespoons of mayonnaise.
- Step 9 Mix well the salad, add salt and black ground pepper to taste.
