Green soup Green shchi - this is sometimes called this wonderful soup with sorrel - this is one of the first spring dishes that we cook from fresh gifts of gardens and vegetable gardens. Many people like this soup very much, so they do not want to put up with the fact that it can only be eaten in season. Therefore, harvested sorrel during the summer, freezing it in large quantities. It's a long and painstaking task - sorrel needs to be collected, washed and dried each leaf, and then cut and put into batches or plastic containers in portions. But in the winter you can enjoy your favorite soup with sorrel, when this soul will ask, despite the frost, snowfall and the lack of this greenery in the shops. It's very easy to make soup with sorrel. If you have a meat broth - it's wonderful, but you can do without it, enjoying the undifferentiated taste of fragrant spring greens. For those who are fasting or dieting, this first dish will be an excellent option to diversify your diet and get an extra portion of vitamins. Each hostess uses her little secrets of cooking soup with sorrel. We have no secrets - we will gladly share with you our favorite recipe.
Ingredients:- Chicken broth 2000 ml
- Sorrel fresh 1 bunch
- Potatoes 4 pcs.
- Carrot 1 pc.
- Onion 2 pcs.
- Long grain rice 40 g
- Parsley fresh 1 bunch
- Pepper black ground 2 pinch
- Salt 2 pinch
- Eggs chicken 2 pcs.
- Sour cream 3 tbsp. l.
- Sunflower refined sunflower oil 2 tbsp. l.
- Step 1 To make the soup, we take a bunch of sorrel, potatoes, carrots, onions, 2 liters of chicken broth, greens and spices, and for serving fatty sour cream and eggs, hard-boiled.
- Step 2 Peel the potatoes and cut them into cubes.
- Step 3 Cut the onions into cubes, and grate the carrots on a coarse grater.
- Step 4 Heat the vegetable oil in a frying pan and fry the onions with carrots until golden.
- Step 5 Bring the chicken broth to a boil, add potatoes and 3 tbsp. l. washed rice, cook everything until the potatoes are ready.
- Step 6 Sorrel is well washed and cut.
- Step 7 A bunch of parsley is also washed and finely chopped.
- Step 8 When the potatoes are cooked, add sorrel and parsley, bring to a boil and cook for 2 minutes.
- Step 9 Then add the fried onions with carrots, and cook for another 1-2 minutes. Add salt and black ground pepper to taste.
- Step 10 Remove the soup from the fire and let it brew for 15-20 minutes. Serve the soup with fatty sour cream and boiled chicken eggs.
