Meat okroshka not birch juice Spring comes, not far off and summer, and therefore, it's time to cook okroshka! Ingredients of okroshki vary from the components prevalent at the time of the year: in the winter we prepare okroshka with radish, spring scraggum appears - ready for dinner with okroshka with wild garlic, the first ground cucumbers are ripe - let them go into the business, in okroshka there is any vegetable greens: all kinds of onions, radish along with a vitamin top, leaves of sorrel and rhubarb give acidity. But always in okroshka we add potatoes and eggs, moreover, it is sometimes accepted not to add potatoes to the okroshka itself, but to cook separately mashed potatoes. I propose a recipe for green okroshka on kvass from birch sap.
Ingredients:- Kvass bread 1 liter
- Potatoes 4 pcs.
- Eggs of chicken 4 pcs.
- Cucumber 1 pc.
- Smoked sausage 100 g
- Sausage boiled 50 g
- Onion green 30 g
- Fresh dill 20 g
- Parsley fresh 20 g
- Sour cream 200 g
- Step 1 To prepare okroshki let's take kvass, potatoes, eggs, cucumber, sausage, dill greens, parsley, onions, sour cream.
- Step 2 Boil the eggs hard.
- Step 3 We boil the potatoes in their uniforms until they are ready.
- Step 4 Cool the potatoes, chop and cut into cubes or slices.
- Step 5 We clear the eggs, mix the yolks with the finely chopped green onions.
- Step 6 Squirrels are rubbed on a coarse grater.
- Step 7 Yolks are ground with onions.
- Step 8 Cut the sausage into cubes.
- Step 9 Mix in a saucepan: potatoes, grated squirrels and sausage.
- Step 10 Cut the cucumber into cubes,
- Step 11 Add to the rest of the ingredients.
- Step 12 Add the finely chopped greens,
- Step 13 We fill the yolks with the onions and mix them.
- Step 14 If a large family gathers for dinner, then we immediately dilute the okroshka with kvass, salt and season with sour cream. We pour out on plates. If you do not immediately eat okroshka, then put the pan with the finished vegetable mixture in the refrigerator and serve as needed, spreading kvass and seasoning.
