Crispy crust and tender curd filling perfectly complement each other. Preparation: In a large bowl, mix the sugar, softened butter, flour, yolks and lemon zest. Knead the dough. Roll out half the dough into a square with a thickness of about 3-4 mm. Put the dough on a baking tray and bake in the oven until half cooked. In a bowl, mix cottage cheese, mashed yolks and sugar. Get the cake from the oven and lay on it curd filling evenly. Roll out the second half of the dough the same square and cover them with the first cake from above. Lubricate the cake with a beaten egg and stab in several places. Bake until cooked.
